This 100% Chenin Blanc is grown on clay-silicate soils and harvested by hand. Fermentation takes place over two months in barrels, followed by maturation on fine lees in tank until spring. The result is a wine with a naturally fresh character, balancing bright acidity with a light residual sugar (2–5 g/L). The distinctive flinty minerality imparted by the soil adds depth and will become more pronounced with age. In the glass, it shines a clear yellow and offers ripe aromas of apple, quince, and citrus fruits, finishing with a refined mineral edge.
