This Gavi is made from handpicked Cortese grapes grown in La Raia's calcareous and clay-rich soils, located 400 meters above sea level. The vineyard follows biodynamic practices, and the grapes benefit from a balanced microclimate that promotes freshness and drinkability.
After careful selection, the grapes are gently pressed, and fermentation takes place in stainless steel tanks at 18°C for 15-20 days. The wine rests on native yeasts for 3-4 months to preserve freshness, then is cold-stabilized and bottled in March.
The wine is straw yellow with greenish hints and offers aromas of minerality, fruit, and white flowers. On the palate, it’s lively, balanced, and fresh, with a hint of almond on the finish. Ideal as an aperitif or paired with seafood, white meats, and fresh cheeses. Best served at 10°-12°C and stored in a cool, dry place for up to 3-4 years.
