Hand-harvested during cool nights early in the season, these grapes are pressed as whole clusters and undergo primary fermentation in stainless steel tanks. A second fermentation in the bottle, with unfiltered yeast, creates a complex profile with notes of yeast, yellow plum, red currant, and grapefruit.
