Sourced from the clay-limestone soils of central-southern Sicily at an altitude of 300–350 meters, this 100% Grillo captures the vibrant character of the region. The vines, cultivated in a spalliera system with a density of 4,500 plants per hectare, yield a refined and aromatic wine.
Hand-harvested at night to preserve its delicate aromas, the grapes undergo soft pressing, with the must clarified at low temperatures. Fermentation occurs in stainless steel tanks under controlled conditions, followed by regular bâtonnage to enhance structure and aromatic complexity. The wine matures in the bottle for 2–3 months before release.
This Grillo shines with a straw-yellow color and crystalline highlights. Aromas of white peach, hawthorn, and grapefruit are complemented by subtle herbal notes. On the palate, its balanced structure harmonizes alcohol with refreshing acidity and minerality, offering remarkable drinkability.
Pair with bottarga or marinated dishes for a memorable experience. Serve at 10–12°C. Alcohol: 13%.
